How do you customize your characters appearance?

Like shown here, theres an appearance tab but I cant seem to find it in game

The Tech-Priest onboard your ship is responsible for appearance customization. If you haven’t unlocked him yet, just progress through the campaign until you find him.

When do you unlock them?

You'll receive a mission to find him in Chapter 2.

You change armor, model changes. Sister of Battle even radically changes color of her hair based on the type of the armor at top of changing her haircut like Assasin does. I think Assasin changes hair color too but not so drastically.

Tech-Priest is just for changing costume and weapon sub-model (among 3 variations), it's texture and colour.
