Their living saint, Saint Celestine, is also the angel you see most often in promo artwork and such. Their patron saint that the order is named after, Saint Katherine, was also one of the originals and is popular for the "battle" part of the Sisters of Battle.
The hair changes with the armor. Maybe there is some armor later on that will give her white hair? There is lore reason why she doesn't have white hair. But, no reason why one of her looks couldn't have white hair.
