It's psychic power, the will of the many draws power from the warp.
So Orks believe so much that something works, it does.
If another race tries to use it, it doesn't work. It does not have the psychic energy to power it.
Because that would require effort to make.

The lore is a bit contradictory on the nature of ork vehicles and weaponry. Some sources do state that ork machinery is only usable by greenskins, but many other sources have Imperial Guardsmen and even Astartes occasionally making use of ork weapons and vehicles without any issues except the poor ergonomics and shoddy craftsmanship. For example, several imperial guardsmen and a Black Templars dreadnought commander and fly an ork heavy bomber in Crusade of Armageddon, and in one of the Space Wolves novels, Ragnar Blackmane and his squad drive an ork war trukk... and even end up in a drag race with the other orks.
The way I like to interpret it is that the orks' war machines do work for anyone, but the orks' psychic instinct and general disregard for personal safety allows them to take several 'shortcuts' in construction that would be unacceptable to most other races in the galaxy. Ork atmospheric aircraft, for example, don't defy the laws of physics the way that Necrons' spacecraft do.
At least their (captured and repurposed) heavy bolters can hit ♥♥♥♥ past arm's length too. :P
