Hide Helmet / Extras panel
Where did this go? I can't find it in any menu.

there is one under the pet tab , it says "Helmet" then u can select an option out of two , Default, No Helmet ... though i am not sure if its possible to hide helmet on some armors , at least in a stealth bodyshuit it wont

On the main bridge to the far left is a station you can click on to mess with those settings. It is right above the tech priest.
