Upon further searching I found someone suggest running the game as an administrator, but the game just crashes before the splash screens even show up. I have a fresh install and even tried validating my game files again, didn't work.
This made me think that the game was probably trying to access some files but something seems to prevent it from doing so, which is strange because this didn't happen before 1.0
Thinking that using my second windows user might be causing it, I tried switching to the first account... Booted the game and somehow I can see my Steam login again (much to my relief)

AFAIK That will unlink your steam ID from the EOS ID on their backend systems regardless of the link state.

I did try more resolutions... I'm not sure if it will work for everyone, but for my case I do use a second account in my computer so the admin access is somewhat limited. I feel like this is causing problems with the game.
I go to the file location of the game and run FactoryGameSteam.exe as an administrator. Normally this would cause the game to crash in the loading screen, but somehow it restarts itself and the second time works -- with my Steam account logged in.
It can be a little inconsistent at times but so far it has worked multiple times for me.
Also worth noting that I was able to link my Steam to an actual Epic Games account (this was also AFTER I encountered this Epic Platform issue), I'm not sure if that has an effect whatsoever though.
