Second, good that you have it figured out, it's a bummer that many games, even singleplayer ones, needs a constant internet connection to play or take full advantage of these days. Some games do track achievement progress locally and update steam apon a connection to steam servers however it seams like Coffee Stain did not do it for this game. If you do ever came across a achievement that you did complete but steam did not update you can look into SAM (Steam achievement manager) however be careful using it as not all devs like players using it, however since it's just achievements, I don't think CSS is too worried about it.
Thnx for that hint on the Task Manager settings, but I had miss typed the wrong thing. I had meant to say Taskbar where it shows my Network and other icon. I know I can play it in a windowed mode, but I like being able to see the whole game on my screen.
The other thing is that based on what it says at this website https://satisfactory.wiki.gg/wiki/Achievements#cite_note-Offline_Achievements-11 which is "Any achievements earned while playing offline will NOT be awarded after you go online. Achievements unlocked by triggering a certain action can be triggered again, but achievements related to progression are lost unless the last online save is loaded. This applies to both Steam and Epic Games." to me it means that even while off line I should be getting achievements or even having certain things count towards it, such as Spaghetti Master. As of writing this, that achievement is still at 348 out of 5,000 and I'm at tier 7 from a newly generated world. I've even got a few belts that goes pretty much from one side of the map to almost the other side.
Also they never mentioned it in the YouTube video https://www.youtube.com/watch?v=FI5ICUZq9Js&t=115s though since most games I've played allowed you to get achievements even when offline, so most likely no one even thought to ask nor did they think players would ask if achievements could be gotten while offline.
I just hope that when the Devs see this post and it is in fact that I'm suppose to get achievements offline, as I have with other games, such as Skyrim and others that are both single and multiplayer. Don't take this the wrong way, but, unless a Dev actually tells me or they create another Q&A video about off line achievements and if players will or will not get them, Then as far as I'm concerned players are supposed get achievements even in off line mode and that there is something that they might have forgotten to do in order for off line achievements to be given
So you are rather lucky to have seen more than I have - and that's saying something considering my obscenely large library.
I've even seen Games give achievements but not lock them in due to some stupid data mining server that I've blocked in my pi-hole (its a DNS Firewall :P ) - generally speaking you can't really do much without being connected in the first place.
