Is it just the game crashing or is your PC crashing with it?
When was the last time you updated your GPU drivers and made a clean install of your GPU drivers (i.e. uninstalling the previous driver before installing the new one)?
Btw. you can even select the clean install when you update your GPU driver. Click on "custom install" and there you should tick the box that states that it makes a clean installation.
Hopefully one of these solves your problem.

I have myself also a 1080ti but never get a crash with this message d3d device being lost.
Good luck!

Some games have issues with overclocked GPUs.
However if that doesn't help either then you need to stresstest your GPU. Because in the worst case your GPU is starting to fail which means a replacement would then be in order.
I'm running an i7-4770K CPU, and AFAIK the game is still CPU-intensive more than GPU intensive.
"The latest drivers" is not always the right answer. Most times new drivers introduce new bugs with older games, or games not using the new features of the new driver.
Display Driver Uninstaller (DDU) is pretty much your best, safest, and most thorough driver removal option. Some of these others (that promise to keep all your drivers updated) rely on hidden adware and introduce malware (my Dad runs these damn apps because he believes the hype and I'm always cleaning his machine because of it).
DDU does one thing, and it does it very well.
The simple fact is you should never update any driver unless the one you have is buggy, or the new one addresses the specific issues you're having, or introduces a feature you simply cannot live without. "If it isn't broken, don't fix it" always applies.
Crank your CPU and case fans to the max and ignore the noise, the game should run much more stable. Take the side cover off if you have to, to help out even more.
I run with the graphics at Ultra and everything on except motion blur. At the start, the game is GPU bound but still runs faster than my monitor's 60 Hz refresh rate. Once the factory grows large enough, the game becomes CPU bound and slows down below 60 fps.
If the latest driver is not better for every supported GPU, that's known as a regression and those are extremely rare with nVidia. AMD/ATI isn't as careful about testing their drivers, but nVidia is quite thorough about benchmarking older games with their driver updates to make sure that they don't reduce performance.
nVidia isn't perfect so they will release hotfix drivers every once in a while if there is a significant regression or bug with their latest driver update, but I've only been affected by that maybe twice since 2017.
This advice is fine if you are talking about a physical machine.
This advice is misguided when it comes to software, because older software often contains known security issues which get fixed by updates.
Adjusting the fan curves can be helpful.
Removing the side cover only helps if your case fans are inadequate. Normally the CPU, GPU, and PSU get cooled more effectively with the case closed and acting as a wind tunnel between front intake fans and rear exhaust fans.
If you do it right, your front intake fans slightly over-pressurize the case to reduce the ingress of dust. Obviously, running with the side cover off results in the system being exposed to dust and it also means more noise.
