Sky Light not active?
When I started playing the game, I noticed that foliage shadows are almost pitch black:

It looks like there's no Sky Light component on the scene.
And during the night its almost impossible to see anything.

Is this normal? Or something wrong with my game?

Nope that's completely normal. That's how the developers chose to light the game world. Everything is normal here. This is currently not a bug.

Alright...
Bit weird though. Usually that's what rookie level designers do, forget to put down skylight. Or just don't know about it or how to use it.

Or maybe the developers are just more concerned with getting the game's features into the game at the moment and they aren't even concerned so much about how the game looks right now. This game is still in early access and it's very much incomplete at the moment. Typically "Polish and optimization" comes near the very end of the creation cycle.

Did you some how not notice it's in Early Access at the moment?

This does need work, but it's not so bad in the desert. The green grass is the worst.

You can see here, in the desert, these shadows are not so dark.

They will probably work on this eventually. A lot of stuff still needs tweaking. There are still parts of the map with the landscape incomplete, foliage floating in the air, rocks that you can walk through, etc. I think the game has been in development for 2 or 3 years, so it could very well be in development another 2 to 3 years.

For now, you can turn off the shadows, turn on your flashlight with "B" on the keyboard or use some console commands to tweak things the way you like them.

You can use "grass.DisableDynamicShadows 1" to turn off grass shadows.

There are other commands also.

r.AllowLandscapeShadows
r.DistanceFieldShadowing
r.Shadow.FilterMethod

More commands here: https://consolehelp.imzlp.me/

I'll stop you right there.
First, having "EA" tag does not automatically protect from critique.
Second, putting the price tag on the game and going public gives only one chance for first impression. EA or not.

And finally, placing Sky Light on the scene is as easy as dragging it on to 3d view, and then just bring down the intensity, so that the shadows won't be pitch black and at the same time it won't affect global illumination much.

So it tells me two things: either that was a deliberate, and poor in my opinion, artistic choise.. Or devs just didn't think about it, or forgot, or lack understanding. In which case, it would be a good piece of feedback to let them know.

I would suggest in the future then that you withhold all of your opinions and thoughts about all games until they reach final release. Because critiquing a game that literally isn't even finished yet is completely unfair. Of course it's going to not look pretty or beautiful or actually downright terrible in some places. It's not finished yet.

Some how in your mind you do not seem to connect the two together that "Early Access" = "Unfinished Product".

What part of "product being sold == it is opened for public opinion" you do not understand?
Stop protecting devs from non-existent threats.
That's the whole point of the Early Access ordeal, you lunatic, to gather feedback on issues of all sorts.

Feedback yes and suggestions on how to improve the game, yes. But not literally insulting the developers for their hard works and calling them "rookie level designers". Come on. They're working hard to try and make this game.

Both of you guys are stupid. Pitch black shadows are NOT intended for the game. This problem arises not because of poor development, but because of a bug in the Anisotropic Filtering settiing. To fix this issue: open NVIDIA control panel -> Manage 3D Settings -> Select the Program Settings tab -> For the program Satisfactory, set up Anisotropic Filtering to be Application-controlled. If you have an AMD card, the steps might be a little different but it is the same idea.
