Have you updated your GPU drivers? Maybe Windows changed them? If you got the newest drivers already, then also try to download an older driver - maybe there is a problem with the latest driver.
Since I dont think that your GPU is broken, its very likely a driver problem.
I recommend using NVCleanInstall (watch a youtube video.. its very easy) to install drivers.
You mentioned DirectX 11. Do not run the game in DirectX 11 mode. ALWAYS use Directx12 or vulkan. NEVER DirectX 11 unless you have a really old GPU that doesn't support DX12 or Vulkan.

It's a common problem with certain GPU's and windows. It crashes when the GPU takes too long to do a task and doesn't report to windows that everything is ok so windows just crashes the drivers to try and recover by restarting them. It nearly always fails to recover, it's a completely broken system but you can make windows ignore your gpu for longer by adjusting that number.
I have a 3080ti.
Messing with the registry is not the answer.
