Gifts will stop falling, and gift trees will stop producing gifts. You will be able to continue to produce ficsmas items as long as you have gifts to supply the factory, but the supply will eventually run out and your factory will stop.
You will not be able to create new ficsmas factories, as the recipes will no longer be selectable.

Honestly, there's not any point to it, though, since all the buildable recipes disappear. You won't be able to use those parts to build anything until next Fics*mas.

As long as you don’t change the recipes on existing machines you can keep building stuff

You can keep crafting parts, yes. But, you cannot build any of the buildables (using the build gun) -- like snowmen and fics*mas power lights.

I make sure to stockpile lots of each
