Vertical pipes - easy way?
At the moment I'm having to lay down excess pipes that get deleted later to provide the framework to put vertical pipe junctions around.
Is there a better way of doing this?

Press "R" when placing pipes and hyper tubes to cycle between different layout styles. One of the styles for pipes places them so they run horizontal and vertical with 90 degree bends instead of the default of point to point with curves. It makes creating vertical pipes easier.

Afaik, no.

I place the pipe junction where I want it, pipe 1m (or so) out from it, delete the pipe junction, snap and rotate vertically a new pipe junction onto that 1m pipe, delete the 1m pipe, and then continue about my business.

No, there are no easy ways to lay pipes in any configuration. All things in the game conform to a 2D plane when placing them, there is no way currently to place an object in a non-2D plane, or another way of saying this is that no, there is no way to put an object down unless there is a previous object to attach it to that is already in the configuration you desire.

So to lay vertical pipes, instead of simply dragging them upward like a ladder, you have to put a foundation, then a junction to attach it to, then connect the pipe, remove the junction, and repeat until full verticality has been attained.

Hootkins advice is half the tip, the other half (something no one has mentioned here so far) is the fact that you can rotate the pitch of the Pipe Pole (non stackable) 180 degrees in 45 degree increments.

use wall mounted pillars and rotate them 90 degrees
