Play other games, in a different genre... Like I'm playing Elden Ring, Getting my Character Ready for the DLC the drops on the 20th
Sure. It happens all the time. And then motivation comes again. and goes again, and comes again. It's quite on-off.
What helps is to modify the game. To take away the tedious, mind-numbing, repetitve petty chores. Adding bigger inventory. Unlocking alt-recipes. Adding building mods like Infinite Zoop and Smart.
The more I can concentrate on tasks I enjoy, the more I enjoy the game.
And you know, all this "waiting for 1.0", that is nuts. People do as if everything would brake. that's just not true. The game requieres that you build and then either rebuild or build somewhere else new and better. That is part of the game. All these fearful "1.0 will break some recipes" ... that fearful thinking is exorbitant. If you feel like playing then play, if you dont feel like it then pause and do something else. Don't make yourself artificially dependent on what the current version is.
For exemple in my case, I've burned out a couple times because I tore down all my factories upon reaching tier 8 and spent too much time in a factory game with no factories running. Another time I tried planning for tier 8 while I was in tier 4... didn't work either
That's why I either replace with blueprints (which is easy) or I just build somewhere else a new/better factory without destroying my old factory.
Mostly I do the latter.

For everyone else,
I am definitely down to take a break, maybe play some other games that scratch the itch like Dyson Sphere or something. Like my brain wants the logistics puzzle solving loop but I find Satisfactory to just require a lot of investment, it feels so slow to progress, I have tried some mods mostly "Daisy Chain Everything", "Infinite Nudge" and "Smart!".
I tried Pak Utility mod but I found that it was too enticing to just cheat.
I for one am waiting with excitement and checking the store page and discussions every few weeks for any news of when 1.0 will be available so that I can finally play this game that's been sitting in my library for far too long.
Motivation comes and goes. I had what you describe several times already. Playing a game for a while but at one point I lost my motivation to progress further. Even Satisfactory is no exception. My 1k hours of playtime consist of several restarts. Until today I even never finished the space elevator.
I have more fun in Satisfactory to create facilities and their production lines than completing any given objectives. Each time when I finish a project I enjoy this success, but furthermore I start to ask myself whats next?
When I have no answer to this question, I take a break. This is what I recommend you now. Take your distance from the game, play something completely different for a while. Maybe your motivation comes back, maybe not.
The most important thing is that you don't force yourself to keep playing Satisfactory. If you're already feeling burnt out, it can only get worse.
