The decision on what recipes the hard drive will offer is made when the scan starts, so you can't save just before the 10 mins expire and reload repeatedly to get what you want. You have to save before the scan starts and wait 10 mins, and reload to before the scan started
Yes can do with existing save. I have a few recipes left and decided to use the option. Got tired of not getting what I needed.
You can also use the interactive map at satisfactory-calculator.com to find the locations of the drives and what they require to open. You can also remove the fog of war to see those in areas you have not yet explored, so that you can plan a route.
The pool of available alternative recipes is static at any given moment. When a hard drive is scanned, it draws from this pool. You can influence the recipes that are available within this pool.
Researching a hard drive will remove an option from this pool. Completing milestones and MAM research add options to the pool. The key to having the best chances for the alternative recipes you want is to strategically manage the times more recipes are added to the pool. This allows you to keep the chances for a particular recipe the highest.

So in short, if you need a specific alternate recipe, look to the table to see its prerequisite and unlock it, then once you have, do not unlock any more tech until you get the desired recipe.

It just lets you pick a specific research to go for in the options in the mam there should be Tiers with recipes in there. They still cost a hard drive you can just go for the ones you want. I like to use it.

Passive mode is in general settings now so you dont need to activate advanced game settings for that.
There should be a different mechanism to research alt recipes that the player has some control over. Looking for the hard drives is just a waste of time, a pointless game mechanics that rewards very little. It's just not worth the effort.
