The foundation doesn't even have to be continuous, you just have to have them where you click. The angle of the foundation you end your rail segment sets the exit angle of that segment,

This Pic only show track going straight up, but you can adapt this method to curved one too.
As I mentioned earlier, you only need foundations where you end your segment. So, if you angle them just right, you can make rail that spirals too.
I see this when I try to get perfect 45-degree angle pipes on foundation slopes, despite angling the pipe connectors. There is still a bit of wave in each connector.

It looks fine in the hologram while building, so it's not like the game is completely unable to generate a properly curved track.
