There is also a mod that lets you rotation and attach foundations at 5 degree intervals or something similar. but you still get z fighting issues if you have things overlapping each other.
now if you dont need things to actually connect then you can simple start a new foundation on the ground and turn it in any direction you like to get a new angle to build on.
What you arr asking for to be implemented properly in the game would likely require a near infinite number of triangle shaped pieces at every conceivable number of degrees a person might want. or maybe like a 5 degree wedge you can use over and over again to get the proper curve to the new angle or something.
Come to think of it the later idea I just came up with seems plausible and very useful. Just adding a single 5 degree wedge that can be snapped to existing foundations would open up a whole lot of new and exciting possibilities without the whole z fighting bug.
I often use it to correct building sins or just to build more creatively.
thanks
