Can anyone explain to me why my tractors unload at a depot they drive through when they do not have an order to stop and unload their.

ie I have two unloading depots 10 meters apart. It drives into one, unloads, then drives past the second, unloads again, and then follows its loop.

Just for clarity, they will also load at loading depots they travel past even without an order to do so.

Really don't understand why the recording/pathing in this game exists if it's not going to follow the specific commands recorded.........?

Is this a bug/known issue? or is it a design feature to make vehicles crap?

It has been a while that I used trucks, but as far as I know. A truck depot will unload/load any truck with in its area. Unloading/loading is set in the depot and not by the path you record with your truck. You have to create a unloading/loading bay area, where only the designated truck drives into.

Trucks and tractors are simple things. They don't really have stops as it were, and instead just interact with every truck station they pass "through". To my knowledge, the only way to have a truck or tractor not stop at a station, is for it to physically bypass it entirely.

Rerecord the route and keep some distance from the stations where you don't need the vehicle to be.

Vehicles ignore truck stations that don't have the yellow pause icon under it on its path. I tested it using both unloading and loading truck stations. What you're experiencing sounds like a bug.
