Is there any way to see what you are using in terms of input materials in real time?

Not within the game except per each machine by walking up to it and inspecting it, no.

Externally, the SCIM (https://satisfactory-calculator.com/en/interactive-map) allows you to load your game into it and pull production stats.

Currently, the best thing to do is to write it all down somewhere as you go.
