ui shortcuts?

are there any keyboard shortcuts when navigating inventories for stuff like smelters and the like. I found that 1 stores a stack of ore in a furnace but I haven't found any key to take stacks from them

Hmmm.
You mean like:
SHIFT + LMB = Put 1 stack to other inventory
Click RMB = Split stack 50/50
Hold RMB = Select individual split amount

I don't think there is an offcial list anywhere. Just some generic controls in the wiki.

You can't split stacks that are inside a machine, I think that's what he's looking to do
You can't retriece just some, you have to take the whole stack, split it in your inventory and put the halved stack back

worry what I mean is is there any button I can press to take all the items out of a machine like how pressing 1 puts a stack in

There is also CTRL + LMB to transfer all stacks of an item.
This also works with the trash can.
Hold CTRL and drag a stack on the trash can to delete all stacks from the inventory.

And yes, you can simply shift click the stacks in the machine to take them out.

It's kinda buggy when trying to load a vehicle with coal, though. It defaults to putting it in the fuel tank. Sometimes a second or double CTRL+LMB click will move all you're carrying into the storage compartment, sometimes not.

I noticed that with coal as well. Other types of fuel will also prioritze the fuel tank if it's the same type, but once the fuel tank is full it'll correctly tranfer to the vehicle storage.
For coal you have to manually drag the stacks though
As for OP's issue, it's been answered above: shift+click for one stack, CTRL+click for all stacks of same items. You can't FILL a machine's input or output that way iirc

You can fill a machine's input that way. I do it all the time when I upgrade my base with foundations; delete the full miners, get 100 ore. Place foundation, replace miner, CTRL+click the ore in my inventory to fill up the tank. Same with the smelter right behind it.
But yeah, doesn't work with ingots at the exit end.

You can also use CTRL+Click to load all Milestone requirements (3000 copper wire in one click rather than 6).
