if you don't have an epic account, you choose EOS only.
All the option does is link your epic and steam accounts so you can access your epic friendslist and make multiplayer a bit easier to connect.
Even if you choose EOS only, you will still be able to play with other players who use Epic, by the way.
It just requires the session ID.
(host does: esc > manage session > session settings > set to friends only and get the session ID for the other person to join with )
And, if you don't care about multiplatform multiplayer through EOS, as in solo playing, then start the game with -SkipMultiplayer. This will skip all that when you start the game.
Like this C:\steam\steamapps\common\Satisfactory\FactoryGame.exe -NoMultiplayer
As long as Steam is running in the background it will still connect the game to your Steam account even if you use this switch.

True, but I meant you're still "online"/"logged into Steam" even with the switch, unless -NoSteamClient is given or Steam isn't running in the background, to prevent the game from spawning another copy of the player, due to how the player is tracked via Steam (as in no true offline mode).
Even loosing connection to the internet or the servers while loading is enough to make the game spawn another copy, and the inventory and certain settings are "lost".
EDIT: And that's something CSS should probably add into the Early Access message when starting the game.
