Why should I build foundation?
I mean it kinda looks cool but is it only the visual aspect? or does it help in some other ways

It helps since your building are aligned on a grid which they aren't when not using the foundations.

Foundations can also be used as bridges or ramps to climb up cliffs, for example.

Also helpful to have a floor when building vertically.

From a logistic point of view it is also easier to build several floors on top of each other, rather than building wide. For that you will need foundations. Also it elimiates hight differences which otherwise would make building harder. Especially on large scale operations.

Personally, I am just OCD, and anything to stem the spaghetti for as long as possible pleases me...

Allows you to drive small cars around the factory for quicker navigation, easier to navigate (when properly arranged), ability to snap to grid better than without the foundation, different aesthetics (if preferred)

Unless you want spaghetti factory where belts are everywhere and things don't line up properly, foundations are the only way to go.

without them, you won't be able to get a lot of precise, fine placements at-scale :)

That's not entirely true.

Snap to grid still functions perfectly fine so you can easily line up buildings without using foundation. The problem is the terrain height differences can really make a mess of splitter/merger manifolds.

Likewise you can just as easily make a spaghetti factory with belts everywhere on foundation.

Because...Giant floating factory platform shadowing half the planet!
Elaborating on what AnT said, the factory cart from the Awesome Store is very difficult to steer on natural ground. Don't bother buying it unless you lay down some foundations to drive it on.

Who doesn't want a pretty base. The 4x4 foundations are fun to use... Then when you unlock the resource sink you can purchase more fancy looking foundations... That make everything so much better asthetically

foundations, are the Foundations of any base
