Once you get past the prologue/intro, the game opens up and gives you a TON of chances to save: quick saving whenever not in combat or in a mission area, quick saving at access-points around the map, or saving at beds in safe areas.
TL;DR: Play on Normal. You get nothing special at all for playing on harder difficulties-- all the same enemies/bosses and all the same loot. You can also raise the difficulty after the prologue with no drawbacks.
Tips: During combat, try to dodge an enemy when you see their eyes flash (red). It will save you many HP.
