As for why? The first generation of androids were designed to blend in perfectly with humans. This is just a trait that has carried on for the thousands of years of android manufacturing generations.
YoRHa androids are bloodless, regular androids (and some machine lifeflifeforms) have blood-like fluids inside them
Everyone alive at current in Automata are machines that have branched off of machine dolls originally designed to house the souls of humans after restoring the world. Which is basically spoilers for the first NieR.
It's also pretty much the same concept as Final Fantasy 9, with Terrans and Zidane's race of Terran-like Dolls that had no souls waiting for Terra to become stable again.
