Does resistance consist of androids or human beings?
There was a corpse of a resistance member (won't say which quest it is to avoid spoilers) covered in blood, and the machine who killed had bloodstain oh him too. As far as I know, androids are mechanical and have no blood (remember that fatally wounded 9S in the very beginning, for example), and all the people are now on the Moon.

All the resistance memebers are androids. And they "bleed". That "blood" is just a function critical liquid with the color and consistency of blood.
As for why? The first generation of androids were designed to blend in perfectly with humans. This is just a trait that has carried on for the thousands of years of android manufacturing generations.

YoRHa androids are bloodless, regular androids (and some machine lifeflifeforms) have blood-like fluids inside them

YoRHa androids are specially made for combat and engaging with the machines. Their internal systems are probably made to be a lot more robust and so probably don't need the "blood" that the Resistance androids do. And they are much newer of course.

Humanity has been extinct in the NieR universe for countless years.

Everyone alive at current in Automata are machines that have branched off of machine dolls originally designed to house the souls of humans after restoring the world. Which is basically spoilers for the first NieR.

It's also pretty much the same concept as Final Fantasy 9, with Terrans and Zidane's race of Terran-like Dolls that had no souls waiting for Terra to become stable again.

Resistance are all androids. The fluid could be anything depending on what technobabble you want to go with. Oil, lubricating fluid, cooling fluid, take your pick.

Have you finished the game? They definitely do bleed.

My car bleeds red sometimes, I don't call it human.

Actually, androids bleed some red-oilish fluid. No Blood, but very blood-like. And to answer OP's question, there are only androids left on the surface of the planet.
