Playing Drakengard 1+2
Whats the best way to play Drakengard 1 and 2 at the moment? Have they been released digitally in any form, or is dusting off the old PS2 the only option? Let me know.

dod2 is not by taro.
I finished 1 and 3 recently and your best bet is probably watching a lp unless you're really stubborn and patient. Gameplay is really not worth it at this point.

You don't need to play D2, only D1, D3(along with its novels) and NieR 1 followed by the stage play if you really want to understand this game's story.

If you really want to experience them as they are meant to be, you're going to need to play the Japanese versions with English fansubs and menus, however you can accomplish that. Playing the first one [the only one tied to Nier as Asagi stated] in English will do you little good from a world building perspective.

Also, start with Drakengard 3, it predates 1 story wise.

I would say Do Drakengard 3 and 1 (get ending that you teleport somepalce), Nier, then Nier:Automata and just watch a recap video of Drakengard 2

Just watch/read a let's play for drakengard, it's not really worth playing, and DEFINITELY not worth playing to the point that it actually ties into nier (that requires 100% completion, and getting 100% is an exercise in insanity)
drakengard 2 has nothing whatsoever to do with nier, and is just bad. Skip it.
Drakengard 3 is okay, if you're into that kind of thing.
