Symbolism. The fact they are dolls doesn't matter, the thing that Pablo got attached to could have been anything in theory. When he saw the thing he had been attached to destroyed before his eyes he lost it. The machines started to hate and fear dolls due to it being a catalyst and caused Pablo to go mad and destroy so many of their friends and family.

If you haven't played Replicant then this will liekly go right over your heads. Perhaps read up on the Ghost in the Machine to get a better understanding of what I mean.
