Check the fields for need zones to know the time they come. You can also search in the forest nearby and even push them into the fields from surrounding areas.
Fallow deer come to the Petershain corn fields to feed (or rest among the surrounding trees), but they will have to move away from there to drink. Since fallow deer rest after their drink time there is a chance that you find afternoon rest zones near the surrounding bodies of water (e.g. West of Petershain Lake or North of the river in the South) with tracks leading away from there in the right direction. Those are your candidates.
If there actually are none with tracks going the right direction - which is entirely possible - you will probably have to do the "run and gun" approach and drive some fallow deer into the zone or destroy some of the surrounding feed zones with hunting pressure and hope that they take the hint.
