Did you take photos of the tracks?
Pro tip: At night you can see said tracks, even without the headlamp that you would normally need to use to see tracks at night.
(I did not photograph tracks other than the bears)
This is most likely your issue. You need to harvest the animal inside the mission area.
Reloading the game should prompt it to respawn, then you can harvest it within the designated area.
I have started and quit the game a few times, and then return to the area. But nothing obvious respawns. I did shoot a couple of other reindeer that dropped dead inside the mission area, and harvested them. But they do not count towards finishing the mission I suppose.
Nothing from the mission is visible when I get there. No lynx tracks, no bear tracks, no calls from a wounded reindeer.
I hope I'm not stuck on this forever. That would be pretty terrible.
Can we reset 1 mission? Or is there something in the savegame that can fix it?
The only thing I can think to do is to keep checking around for the wounded Reindeer after each restart, it should respawn in a certain location and allow the mission to proceed.
I'll put up a tent on the spot and then I'll let a few days pass in-game. I think I will move to another reserve even just to be sure. After that, I'll come back and check if any special reindeer has respawned :)

I got in the game to try the above just now... but I just could not resist taking one last peek before going elsewhere..
..and I heard the wounded reindeer sounds. It respawned!
It was a bit dark this time, 20:10. So, I was taking no risks this time, I crawled to about 40 meters very silently and went for a 7MM double-lung shot. It dropped right on the spot.
As soon as I harvested it, the voice over continued. Mission complete! Woohoo.
