Fast travel bug - killing animal, need fast travel to reach, dead animal is gone
I did a quick search and it seems that people have experienced this issue even back in 2017.

Hirschfelden

I was on the east side of the Bohndorf Lake/river, lying down, when I shot a male red deer (LVL 6 or 7) on the other side of the river. Distance appr. 130 m. Weapon 7 MM. with poly-tip ammo. I was doing it for the Fleischer #1 mission, which was active on the HunterMate.
After the shot, I watched as health sank straight to 25%, and then the deer died on the spot. I watched this happen through my rifle scope.
Because there is no way in that particular area to get across the river, I pinned the animal on the map and fast traveled to the cabin on the other side (Bohndorf Outpost). Appr. 600 m. from the dead deer. Walked back to find the tracks and the pool of blood (stating "Vital hit") where I watched the deer die, but the body was gone!! Are they supposed to disappear if you fast travel? It was my only way across! Pretty sure I have done this in Layton before, a long time ago, without losing my kill.
The deer stood at the following coordinates:
-8446,552 / 6170,435

I seem to recall hearing something about a correlation between rendering distance (which is about 430m on my map) and animals vanishing. For example I've seen the animals vanish at that rendering distance and elected to go after them. Once I got to the place where they vanished their tracks simply ended leaving me with no trail to follow.

I've fast traveled from one side of a lake to another, as a time saver, when retrieving dead animals several times and never had a problem in doing so. The distance between myself ant the dead animals never exceeded the rendering distance though. Just tossing out that it might not have been fast traveling but the distance between yourself and the dead animal created when you fast traveled that caused it to vanish.

Right! (Y) That could explain things! Still sad if it's supposed to be like that. Didn't cross my mind that I shouldn't take out an animal at (only) 130 m. - because of a stupid river blocking the way. :steamfacepalm:
