Restarting the game also fixed it for me too.
It is not only the highlightes of the tracks that disappeares, it's the track. So, it does not help to turn the flashlight on. This has happened multiple times, both during the day and during the night. When the tracks first disappeares, the tracks I have seen before also disappeares. I can see them on my huntermate, but not on the ground...
In my case, this is not the issue. When I restart the game it is still night (or day) and the tracks are now suddenly visible.
Ah! That might be! Hopefully this will be fixed in the next update.
So here we are in 2021:
It was 16:30 on Layton. I shot an Elk (saw him drop after being hit) and could not track him afterwords (I saw where he run so there was no way to "miss" the tracks.
I could not see any other tracks in the area either.
I shot then a moose which died immediately but when I walked over, I could not found the tracks or the body.
I traveled outside the area by foot (text on screen appears informing you where you are) and shot another moose which I could now track and harvest. Turned and walked back to the place where I had shot the elk and could now find other tracks in area - but not the tracks of the above mentioned elk.
I had not changed the settings before that but did try to change the settings of the color of the tracks right after I discovered the bug.
