2). Not that big of a deal; slap it in a DLC & it's up to the player to use or not use it.

By all means fix the weather (and wind direction) so they aren't constantly changing.
Indeed they do, however even suppressed supersonic ammunition has a marked reduction in decibels produced, and therefor sound carry distance. Would fully support subsonic ammunition to be included as well.
I'd say the obvious choice for your .308 would be the Ruger Gunsite Scout - brainchild of Col. Jeff Cooper, and a fantastic little bolt rifle more than capable of taking big game.
Another obvious choice would be the AR-10 platform, not as common as the AR-15 is in hunting, but still an excellent option for .308 and other larger calibers like 6.5 Creedmoor.
I think the biggest problem with proposing modern hunting options is of course the Fudds who don't know what they're talking about who keep throwing tantrums about introducing semi-autos or just intermediate cartridges in general to this game, as if they think they'd be forced to play with it or something.
I also agree we need better reticle options, too.
There are so many different reticle types IRL, almost any are better than the garbage crosshairs we have in this game. Illuminated reticles would also be cool (every optic I hunt with IRL has the option to illuminate the reticle, btw).
It would also be cool to see some first focal plane long range optics like my real life 4-14x44mm optic I hunt with. Sure, FFP isn't all that great for close range hunting in the woods, but like where I live in the deserts of the Pacific Northwest, taking a coyote at 500 yards isn't exactly unheard of; we have miles of sight lines, and just this past season I took an elk cow at 480 yards, dropping her like a sack of bricks on the spot. Didn't even need a range finder because I can use my FFP reticle to range find (one less piece of gear to carry).
As for subsonic ammo, that'd definitely pose an interesting game mechanic, but I'd prefer they fix the useless soft-points in this game first, and make them actually reflect their real world counterparts which are actually quite effective. Once they fix soft-points, I'd be glad to see subsonic ammo in this game. I'd also like to see a better ballistic arc and zeroing system in the game, something other than these generic 90m, 150m, and 300m zeros given to all rifles. Pretty disappointing using the 200 yard battle sight on the Monte Carlo Sporter Enfield No.4 Mk1 in this game (F.L. Sporter) and having the zero be anything other than 200 yards (I have a real one IRL, and yes, the battle sight is 200 yards as the Brits still used imperial measure in WWII).
I totally agree, bipods would be awesome, and maybe tripods for crouching. The trade off would be the amount of time it takes to setup, the prey may move away.
Suppressors, while hard to get in the US in my places they are legal and in some places are purchased right off the shelf like a scope or sight. The added weight may also help with recoil.
But I'd also like to see different chassis systems for rifles as an add on or something.

Suppressors would be number 1 on my list. Just make them useable/unusable depending on the reserve your on, to line up with local laws.
Bipods would be epic to, especially for those looooong shots
Bipods would be nice or the abilioty to lean or lay on something; i never noticed any big difference when aiming, but in real this is a big difference.
and make Multiplayer more fun with much more options to set for the host.
f.e. host should set Bow hunting areas on the map or set onyl available rifles or ammunition.
When i'm in the hills (for real) and i haven't taken my bipod, i always have my backpack to act as a rest at a minimum as well, so a reduction in weapon sway should be modeled when your character is lieing prone in the game.
tripod rests like in classic would also be nice
I'd like to see an AR-15 variant rifle with both 5.56mm ammo added and able to use the .223 (its just pressure difference at that rate) with a 5 round magazine (balancing and legality) as well as an AR-10 Variant that uses the .308 cartridge. I've been wanting these for a long time so hopefully soon we'll get them
