Is there any other good hunting games?
Hunter Classic, which is the predecessor to COTW and Way of the Hunter.
RDR 2 has good hunting in it, in my view, but is not a hunting game.
And coyotes are a difficult animal to hunt in this game. Super wary and make hard targets even if you get one in your sights.

Way of the Hunter is the better hunting simulation. I prefer the boots on the ground part of this one. The actual hunting part. Weapons, scopes, ballistics, animal behavior, view distance I think are better.
Call of the Wild is a better game. Game loops are more fun, trophy system is more interesting, there is far more content in terms of reserves, weapons and gear. And statistics, which I love to keep track of.
I think any fan of hunting games should own and play both.
