Six things to keep in mind:
1. You will absolutely want the Tents & Blinds DLC.
2. The High-tech Hunting pack DLC is a huge upgrade for night hunting.
3. Tripods (and treestands, but I don't use the latter) are really great for reducing hunting pressure (you can kill many more animals at a location before having to move on).
4. You will want Weapon Pack 1 (WP1) or the Modern Rifle DLC, to get a .22 rifle (to hunt Class 1 animals, like rabbits, turkeys, geese, and ducks).
5. The bundles (other than the Complete bundle) are carefully crafted to ~NOT~ give you all the functionality DLCs you are going to need/desire after you get into the game.
6. The base game (which has two reserves), without any extra reserves, can provide you with ~THOUSANDS~ of hours of entertainment
The Complete bundle looks like a real steal, at $45, and if I did not already have the game, that is the one I'd get. As Poltergeist said:

If you are pinching pennies, get the Diamond pack ($19.30), and add the following:
a. Weapon Pack 1 ($1.19) or Modern Rifle pack ($2.99), to get a .22 rifle;
b. ATV ($1.19) if desired;
c. Verhonga Savannah Reserve DLC ($2.33), if desired (safari hunting).
d. Wild Goose Chase DLC ($1.19), if (like me) you'd prefer hunting geese instead of ducks.
If you get all this (and go with WP1), the total is about $25 + tax. With Modern Rifles (I'd do this) the total is about $27 + tax. Either way, this modified bundle (I'll call this "Diamond+") has plenty of variety of weapons and reserves, and will give a casual player about 98% of the enjoyment you'd get from the $45 bundle.
I'd stay away from the Gold Bundle. By the time you get done adding things you will really need, the total price will be more than the "Diamond+."
The problem with the bundles is that they exclude DLC that are usually useful to have. For example the diamond bundle does not have the ATV, the dog, and the tents. These are contained in the gold bundle. On the other hand, the gold bundle does not have any lodge. Not one but two lodges (you don't need both) are included in the diamond bundle. Lodges are a must if besides hunting you want to display some of your trophies.
So when you realize that the bundle itself does not offer what most players usually want, you'll be forced to buy extra DLC. Which means spending even more money that you initially intended. Sounds familiar?
Keep in mind that if you choose to buy anything else than the complete thing, you'll be forced to buy DLC individually in the future because currently there is no such thing as 'complete the bundle'.
And as a first DLC reserve i would go for Yukon because i like the weather change and you get the great 0.300 Magnum rifle.
