Taxidermize means that you spend the taxidermize amount of money shown in order to save that harvest for later use in a trophy lodge assuming you have one of the trophy lodge dlc, otherwise thaxing animals is just a waste of in game money.
Save hrvest is similar but yet different. With save harvest youre just saving that harvest into a set of limited save slots for harvests to taxidermize later on. So say you dont have the money to taxi a hunt, but you still want it later on as a trophy in your trophy lodge. Youd instead save the harvest instead of straight up taxidermizing it.
Also, if you dont want to do either of those things, you can simply click on the accept or harvest button at the bottom right of the screen whatever its titled i cant remember off the top of my head. But when you click that button youll just straight get the alloted exp and money from a harvest without needing to save it or taxi it.
