The weapon only matters insofar as you need to pass the harvest check, otherwise your score will be penalized and you won't be able to score a diamond. Bears are class 7 animals. Popular weapons that include class 7 are the Eckers .30-06, The Canning .300, and the M1 Iwaniec. Each has its own advantages and drawbacks.
There are (allegedly) methods to "groom" diamond animals by selectively shooting animals that are at the high end of their weight class, which apparently gives them a chance to spawn one weight class higher. Many hunters follow that strategy, I have no personal experience with it though.
