It is annoying to be sure, so you have to get into the habit of double checking the zero whenever you select a new weapon.
In 'Way of the Hunter', the elevation zero range setting is an adjustable parameter (the elevation turret) associated with the weapon (and you only see this when looking through the scope), whereas in this game, it seems that this parameter is associated with the HUD. I suppose there is a rationale for it - after you've set up a shooting position and range estimated your target, you can set an appropriate zero; when you select your firearm, you don't have to worry about 'dialing the elevation turret', even if you decide at the last moment to switch to another firearm. However, if you have the 'Ranger' perk (it's a 3rd (counting the root node as 1) tier node in the handgun perks tree), which is now really useful since the last update ( it displays the estimated distance to the target as a lower-upper bounds pair when you spot an animal), you can skip the separate range finding step and set a suitable zero distance fairly quickly.

edit: wanted to add it seems to not have happened as often the last couple days though, seemed to happen more right after the update but last few days ive been hitting fine, which doesnt make sense and weird to me
I'm sure this is not case in RL if you wear more than one scoped gun.
EACH gun should have it's OWN zeroing and STAY as set.
Would avoid tons of frustration. Even after 1.900 hrs hunting.
