The main advantage of rares like albinos and to some extent piebalds is that you can identify them quickly even from a large distance. So my advice would be to move around a lot. Some species have comparatively many rares. I know I stopped taxidermizing axis deer piebalds rather quickly.

As for there rarity compared to diamonds: With above mentioned exceptions, any one rare fur type will tend to be rarer than a diamond, but rare fur types overall might be about as rare as diamonds. At least I have roughly as many rares as diamonds.

Good question. I don't really have an answer, but I would guess it's better to kill many animals and maybe do a "silent" round every once in a while. An animal you missed one day will still give you many chances to spot it later.
Also, spooking animals e.g. from their zone can also help to see them, so try to look around after you fired some shots instead of being focused just on your current quarry.
And just in case: Rare fur types aren't more skittish, they are skittish according to their level.
I don't think the rarity of their fur makes than more skittish.
There are many LVL 1 females with rare fur.
It's the level rating alone that sets the enhanced behavioral status.
I don't know how the rare furs spawn, but I try to kill the rare furs in the hopes that it does trigger another rare fur replacement.
For example, I've been hunting for a white buffalo, and when I see other light colored furs I will kill them hoping an albino might replace them.
