Tracking distance reflects the distance player will travel from the first track you tag of that specific animal after it has been shot.
So if you go to the 'first hit' blood spill where the animal was shot, the indication in harvest screen will indicate the distance between that hit spill and how far the player has travelled to get to the carcass.
The distance continues to be calculated as the player travels irregardless of time or pathway. And if you tag that animals sign at some point following that original hit, the game starts it's calculation from that point on.
I got an elk yesterday that I didn't harvest right away, as I did some other hunting and tracking after I shot it. When I finally collected the Elk it showed tracking distance of 3 miles or so. And I hadn't gone more than 500 yards from the outpost.
It simply recorded all the extra walking I did from the time I first clicked on one of its footprints or signs until I collected it, irregardless of how many other harvests I did in between.
I'm not sure if time travel or fast travel affect that.
I shot my Moose from 46 metres, saw it drop, and walked straight to it. As you can see it didn't go very far,

Off Topic - what is the best way to display screenshots in a post. In this case I used a link to my entire screenshot library which I then edited to a single post! Obviously not the best method.
