Apart from that always shoot the animal with the most points. You can see how many points an animal could be worth by spotting it and looking in the top right.
Birds, rabbits and whitetail deer top out at level three. A level 3 will likely be a gold or even a diamond trophy.
Herbivores generally top out at level 5, though there are exceptions (red deer = level 9). A level 3 animal will likely be bronze.
Carnivores top out at level 9. A level 3 probably isn't worth shooting.
Because it isn't anything UNTIL you kill it.
Gold is the score considering how you killed it, which can't be determined until you've done so.
A potential good score can be ruined by shooting it 20 times for example.
