You're missing my point, I just want to see what time it is, while I'm walking around, hunting. At a glance. I'm aware of the hunter-mate. I just thought it would be nice to know what time of the day it was, without having to go look for it.
That's true but this solution requires pressing tab to bring up the huntermate. This is even slower than pressing escape. I don't think the OP is asking for something like this.

this is a hunting game, not a clock watcher sim - if you need to know the time irl, youll have to put some effords in to that aswell, like raising your arm or touch your "smart" phone screen.
exept you have your flat/room plastered with clocks on every wall and in any direction you may look, eventualy.
how can this be more unrealistic? this game is supposed to simulate a hunter feeling (no, its not a simulation), and then you want all kinds of displays right onscreen?
install a da.. overlay programm or place a clock in visible reach of your pc screen - but watch out, you may have to force your eyes to focus on the clock
Put /borderless on your launch options. That should make it borderless-windowed mode.
