Most predatory species (like bears, lions, pumas, coyotes, wolves, etc.) go to level 9 "legendary" as the top level. Cape buffalo, water buffalo, and red deer go to level 9 as well. Many of the larger, antlered/horned animals (like mule deer, moose, elk, bison, sheep, goats, etc.) only go to level 5 "medium." Whitetail only go to level 3 "very easy." Many of the class 1 animals can score diamond at level 2 "minor" or 3 "very easy," but geese have to be level 5 "medium." As you play, you'll learn which species top out at which levels, and how rare the top levels are. For example, it seems (in my experience at least) that cape buffalo and water buffalo have a higher chance of spawning at the top level than many other species. Also, geese and ducks seem to provide more diamonds than normal.
Everyone's experience may vary, of course, but of all the max level animals I've shot, 80 were diamonds and only 4 were trolls. In all that time, though, I've only had 5 turn out to be "surprise" diamonds (not max level).
