You have just been a bit unlucky.
Not sure what you mean by "higher classes". Highest rating is diamond.
The most important thing is to controll the drinking zones of each species - there you shoot all males, preferably the high rated ones..diamonds should come then from alone.

I seen one deer labelled as "Mythical" but i couldn't catch up to it. Even with it walking I could not catch up to it. To me it was like play chess...for when i would move to cut it off...it would counter my move. It kept changing direction too which made it harder yet to stalk. The wind was always in my favor following it but it didn't matter. Would that have been a diamond ?
Diamonds are very, very scarce. Usually no more than about a handful on any reserve. There's a very good chance for some species to have no diamonds at all on your reserve. From my experience, you have to kill about 250 male animals on average to get one to respawn.
Unless you're actively looking for them all the time, the chances of killing diamonds are low. Know the max weight/level for every species on the reserve you're hunting. Make sure to check all tracks you come across for potential diamonds and then hunt them hard once you've located one. Don't immediately shoot the first animal you see. Check around the immediate area to make sure there isn't another better one nearby before you shoot.
Diamonds sometimes hide in the brush a little ways away from the other animals, arrive at need zones later and stay for shorter periods of time, or stay tucked in the middle of herds where it's harder to identify them and get a shot on them. They spook from a longer distance away, and tend to flee and not come back once you've spooked them. They're not as responsive to callers, and sometimes spook when you try to call them. They do also absolutely work to stay downwind of you if you're trying to track them.
It took me over 300 hours to get my first diamond, but I've gotten plenty since. Looking for them is a skill you have to work at.
Never expected it, but wound up with a diamond [ # 9 Legendary ] popping out of nowhere. This was with slightly under 200 hours.
Another time a # 8 Mythical was transiting an area I selected.
The diamond was with a herd & the mythical was just with one other buck.
Both were random.
I started a new character not long ago and first black buck I shot with the dlc M1 was a Diamond. That character had 5mins of played time. Yet my first character when I got the game was about 300 hours in before it got its first legit diamond.
What might have happened was that you shot a diamond but didnt meet all of the trophy scores to make it a diamond. Maybe you shot it in the intestines or something. I've definitely botched a few shots myself and lost a lot of gold trophies

This can´t work, as Blackbuck is Class 3 and M1 4-8 ....
mayb you let online players on your maps and other players killed your diamonds.
