Do animals always bleed out? No matter where you hit them?
So far it seems that way to me, even shots that should not have been deadly because I messed up. Kinda lame that you can just shoot them anywhere and get a kill? Sure less score, but still.

not all the time. I've lost blood on numerous times that went down to 50%

How lethal a bad shot is seem to depend a lot on the animal type and the caliber. I had foxes bleed out by hitting the ear or leg with a .243. An elk on the other hand can take mutliple hits of the same caliber without dying, as long as you don't hit an organ.

And if you shoot an animal with a caliber that is considered as too powerful by the game will they almost always die, no matter where you hit them.

It's true, the smaller game in the game do tend to die no matter where you hit them. Injured animals die all the time in RL. That doesn't relieve us of our responsibility to make accurate and ethical shots.

Dog helps find them when small blood pools.

Nope. Bleeding stops, especially on larger species.

We aren't sure of the mechanics, but they can bleed out, and at other times the bleeding stops and they live on.

You can hit a deer anywhere and it will die
