Yes Taxidermy costs money, more or less depending on the size and species of your animal.
Which gets me to my next question. How do I actually sell animals? Or does this happen automatically when I examine them after killing them ?
If you click "accept" at the harvest screen, you sell the animal (for meat, I guess? Fur? Not really clear).

I mean, thats literally selling them, isnt it. Harvesting the carcass for fur, meat and whatever you find and then selling it?
it literally is selling you even get less money for example if you destroy skull which is a valuable part

I have a lodge for my favorite "gold" harvests, one for my favorite "rare" harvests, and one for my "diamonds." I can walk through them and remember the hunts and examine the animal models up close. It's one of my favorite things about the game, actually.
