This is the only way to be able to exhibit your animals in your lodge. Without taxidermy you can't put them in your lodge and you lose them, you only get back the money from your hunt.
Yes Taxidermy costs money, more or less depending on the size and species of your animal.

Sometimes you come across a rare animal you just dont want to sell but want to keep for bragging rights, like an albino, a good Diamond or maybe even a great one. Thats what taxerdimizing is for

Which gets me to my next question. How do I actually sell animals? Or does this happen automatically when I examine them after killing them ?

It appears to be pointless to do this if you aren't using any of the trophy lodge DLCs. I don't really know what these do as it's not something that interests me, but I'm guessing it's just a collection thing and maybe you can walk around in your lodge like a little in-game map.

If you click "accept" at the harvest screen, you sell the animal (for meat, I guess? Fur? Not really clear).

Yep, once you confirm your kill you can click "accept" (may be called something else in english, I am playing the german version) on the bottom right and you automatically sell it

You don't sell animals. The way we earn exp points, in game money, improve our weapon scores etc... (all of which we need to unlock or buy better weapons) is by harvesting animals. It's a means to an end. I've often wondered why, when the harvest screen pops up, I have to hit the "accept" button since I have no other option but to do so. The amount of money or the increase in weapon score/exp depends upon the animal and our passing the harvest check. People may opt to pay the taxidermy fee for an animal and put it on display in a trophy lodge, much the same as the way others might choose to display an Olympic Gold Medal. In part it's to show off to their friends but mostly it's for the memories it invokes.

I mean, thats literally selling them, isnt it. Harvesting the carcass for fur, meat and whatever you find and then selling it?

I have a lodge for my favorite "gold" harvests, one for my favorite "rare" harvests, and one for my "diamonds." I can walk through them and remember the hunts and examine the animal models up close. It's one of my favorite things about the game, actually.
