Enjoy filling your lodges, for many, its a very fun part of the game. Especially online players.
You will find the longer you play, the more particular you will become on what you taxidermy. When I just started out I taxied almost all golds ><
It's been a moving target and it also depends on the species. Right now some species have a bug causing diamonds to be too common. A couple of species seem to have a bug causing diamonds to be essentially non-existent. I believe once that gets fixed they'll go back to being the type of thing you feel really lucky to spot.... but not so incredibly rare that you go thousands of hours without seeing one.
IMO Golds used to be more rare and are too common now across the board.
Mind you, it is hard to pinpoint because everyone has different skillsets, skill-levels, patience and experiences.
Nebulous mentioned about certain species having more diamonds. I know for sure that hares tend to always medal silver and up. But never seen a diamond yet.

When i replace one for higher value i don't delete them i put in another lodge
Now i have a second lodge only for rare / and other fur, and a 3rd one for the deleted golds from the 1st ( with nice antlers ).
Also i'm trying to have all the fur from some animals ( ducks, geese, rabbits... ) so some walls look nice with all the fur from the same animal
