It's not so important how often you hit. You must use the correct weapon class and place a good shot on the lungs. Then 1 shot is enough. I use the the 7mm.
223 - red fox
243 - roe deer
7mm - red deer and fallow deer
And always use the PSG bullets
Yea hard to beat the 7mm. People hate on it for the one round thing but it shoots far, straight and hard.
The .270 + poly + lung shot will do it: Red deer should not run far if you string those three together. I have even taken a Red with a .243. But, yes, the 7 mm makes it much easier to get a kill on Class 5-8 with a less than perfect shot.
Don't forget that the CB70 or even the CB60 (both are in the base game) will easily take down a Red with a lung shot using the starter 420 grain arrow. The compound bows with 420 grain arrows have more penetration than any rifle in the base game, with the possible exception of the .338 (dunno, I don't own the .338 yet, and may never). I shot a fleeing bear up the rear end with a 600 grain from a CB70, and the arrow went through the length of her body, hitting about four organs, and would have exited her mouth and kept right on going, but got stopped by her jawbone.
Do you have the Red deer caller yet (probably not, if you don't have the 7 mm yet)? Or tripod DLC? I take Red deer by the dozen. My favorite shots are 5 to 20 meters with a bow, from a tripod in the middle of a need zone; but will resort to the 7 mm if they are beyond 50m and I can't call them in. IMHO the caller is not as important as the tripod or blind, but it makes it harder if you don't have any of those.
Furthermore the description that tells you it´s effective range is only 150 meters is wrong, it´s a very viable sniper and the caliber of the rounds is just mean. Despite the number of the rounds stating almost the same to 7mm it feels stronger and considering how much bigger the bullets are it should be from a logical standpoint.
It´s kind of the Jack-of-all-trades, since you have to opportunity to hunt every single species with one rifle.
