I am sorry to say this is more marketing hype than reality.
First of all, he has nothing at all to do with the missions, so don't expect that.
Essentially there are a couple places (picnic tables and whatnaught near outlook towers and a few things elsewhere) scattered around the map where, if you interact with them, he gives a brief story about one of his hunts.
Also, if you have the tutorial system on, he'll tell you about the animals. And if you don't find a track within a reasonable amount of time, he'll remind you of the importance of tracks. (Much like Carolina from Parque Fernando will tell you about applying the sniff-test....)
All in all, for all the hype made about this, it was rather lackluster and disappointing.
Unless he was instructed to keep his mouth shut and accept the game as it is.
