Report a translation problem
I have played with both 3440x1440 and 2560x1080 resolutions without any issues at all. I set the FOV to 80 as it feels best for me with the set up I have. To be fair, I can't remember the last game I had an issue with on my 21:9. Sorry I can't help further maybe someone with a bit more technical knowledge can help you.
I can understand your worries, in times where ultrawide support means cropping / Vert- in a lot of titles I am extra cautious as well.
It sucks when people tell me that ultrawide works fine and then you lose 1/3 of your screen estate or still can not access menus etc. Some people who use ultrawides are blessed in their technical naivety ;)
This game supports it in HOR+ and you got a FOV slider on top. I tend to not raise mine over 75 as it gets to fisheyey for me.
72 is a good value for me, but I guess some people need to see 270 degrees ingame ;)
And because I am just a stranger telling you stuff I made 2 pics so you can judge yourself. (menus and hud are perfectly placed, btw)

Regarding your FOV issue:
The game looks stretched at any ratio when you up the FOV. At 32:9 you should already see a lot, I do not get why people need 100+ FOV on top of that.
I just wonder how some games manage to get rid of the fisheye effect altogether, even with FOV setting set to max?
I play some games with my steam controller or xbox elite gamepad on the TV, but that are usually very laid back games like Warhammer Underworlds Online, Legend Of Keepers or Deathtrap Dungeon where screen tearing is not a thing.
Fasconating that your FPS go up the higher the FOV goes. Go full 360 to set your card on fire ;)
