On Hirschfelden I've done them all day long and all night long. Easier to see them in the daylight, but even at night it's pretty easy. Call and they will come.

Strawfields. Corn fields don't work because the corn is too high for the decoys. Believe me, I tried. :)

There is no "best time" for geese. They follow a certain path on your map and will fly over your position, if placed well, every 5-7min real time. Geese don't use need zones, they follow the same path at all times. The only thing that can make them not land is 1) movement, if you move or walk while they are overhead (even at 300m+, if you can see them, they can see you) 2) not using your caller. Because of the fact that they have no need zones, geese are a great way for fast money and exp. Once they land, you should get 3 geese with 20 gauge (3 round model) followed by two more geese with your favorite rifle. Best spot is anywhere there are hay bails/dry grass. Use your decoys wisely.
