Is there a list for all mission animals?

None that I'm aware of. There are missions in LL involving Black Bears, Blacktail, Whitetail, Moose, Coyotes and perhaps Elk. Some of them involve tracks, poop, photos, harvest with weight and/or harvest check requirements and some with shot distance requirements or day/night harvest requirements. Don't worry about inadvertently killing Mr. Black before you get the missions involving him. He's invulnerable until you complete those 2 missions involving him. Check the Wiki for more specific info about missions by reserve.

There are 3 diamond mission animals in Layton Lakes. 1 coyote, 1 elk and 1 black bear. Elk are currently bugged and can't score diamond so I'd wait for a fix If I were you before completing Connor's last mission (the diamond elk one).

According to the B&C score sheet there are 4 measurements needed to score the trophy. Tine lengths of all tines (incl brow tines), circum measurements taken between the times, overall main beam length and inside spread. We're missing the inside spread measurement in our TruRac scoring.

It's not possible unless you have a backup save from before you completed the mission. But don't sweat it, it's not a real diamond anyway, you can taxidermize it and all but mission diamonds don't show under total diamond harvests on your profile.
