no from what it sounds like your doing your shooting it to where it bleeds out slowly and chasing it for an hour you need to drop it dead in its tracks on the first shot
You didn't read it fully, I still tried 1 tapping one by shooting it in the head from far away.
then be sure you have the harvest bonus and you need to drop it dead in its tracks
Broadside spine shot on a fallow with the .243 is your best option. It's easier to make than a heart shot.

Second best to drop the animal where it stands to get the quick kill bonus. Not always possible but try.
And lastly make sure to harvest a small animal first so you can see if your consecutive harvest is at 100% if it isn't then kill a few more smaller deer or something to get it to 100 should take 5 or less depending where it is then go after the big ones.
Those track weight ranges? The max is a dream. Odds are the animal will come in near the min weight shown. When I see a range of 85-100 KG I see possible gold. Decent antlers and it's in.
As a quick way to field judge a Fallow, I look at how wide the palmations are. If there are several bucks together I'll go for the one with the widest palms first every time. Wide palms by themselves do not make a gold level animal, but I've never managed to harvest a skinny palmed Fallow that scored better than silver (if that).
For drop dead shots I go for easiest and most forgiving shot available (i.e.the spine). My most successful spinal shots on Fallow have been broadside with a point of aim approx 1" below the top of the back just behind that little hump wherein the tops of the scapula lie. Much easier shot to make than one at the heart, especially on a trotting animal.
So, like the other responders have said: In this game your best option is a spinal shot on a lvl 4.
Hope you experience the satisfaction of seeing that animal hit the ground with a thud so you can complete your mission.
