If you are lucky enough to have an initial spawn with several rare fur types, you can get several early on in the game, but if your spawn has no rare fur types, then you have to kill until one of them happens to pop up while replacing the animals you harvest (which means you have to wait for that "1 in whatever" chance.
And another thing to remember is that an albino/piebald/melanistic/etc remains that way regardless of your integrity bonus. There are plenty of diamond level animals I've taken, back when I cared nothing about score, but were not diamonds because of the lower bonus score.
For me, Albino is the most rare in the game as i have never seen one.

Plus, I don't have that perk. Actually I've seen some videos that recommend not using that perk, you can apparently more consistently identify the diamonds by the weight estimate. Some sort of bug is causing the estimate to always give you the animal's weight as the lowest weight in the estimate, so you know by that if it's diamond potential. I've not really attempted to use that so far, but it does seem correct based on the weights of the animals I'm seeing.
Tho I tend to run/walk all the time so I haven't really tried to find any Diamonds until I've completed all the missions.
In Layton Lake, Black Bears and Rabbits seem to be more common to have different color variations. as you can see in my screenshots: https://steamcommunity.com/id/funGi_right/screenshots/
BT, WT, RE and Moose seem to have the same rarity. I've only seen one rare Coyote during my 400+ hours.
I haven't played much on Hirsh and Medved so I cant give you any info on those maps.
According to my fiancée, since she hasn't seen one, diamonds are more rare. But I'm not sure she was talking about trophy scores or something else... I wasn't really paying attention.
